Tandoori Prawns with Mango

I tried this recipe out for the first time this weekend, and it went down a treat! These tandoori spiced prawns are super quick and easy to make, and go amazingly well with fresh ripe mango and red pepper. I've cooked these under the grill, but you can also cook these over a BBQ.

Prawns are a great source of protein, and contain good levels of zinc and selenium - essential for good skin health.

These can be enjoyed as a starter or snack, or as a main dish with brown rice or roasted vegetables.

Serves 2

Ingredients:

  • 300g cooked king prawns

  • 1 inch piece of ginger, grated

  • 3 garlic cloves, crushed

  • 1 tbsp Greek yogurt

  • 1/4 tsp turmeric

  • 1/4 tsp hot chilli powder

  • 1/4 tsp ground cumin

  • 1/4 tsp garam masala

  • 1/4 tsp ground black pepper

  • Salt to taste

  • 1 large mango, peeled and cubed

  • 1 red pepper, deseeded and cut into chunks

  • Lemon wedges

  • Handful of fresh mint

  • 5 wooden bamboo sticks soaked in cold water for 30 minutes

Method:

  1. Grab a large bowl. Add in your ginger, garlic, yogurt, turmeric, chilli powder, cumin, garam masala, salt and pepper. Give this all a good mix.

  2. Add in your prawns and mix to ensure they are evenly coated. Cover, and leave to marinate in the fridge for 30 minutes.

  3. Heat the grill to a medium-high setting.

  4. Rub the skewers with a little olive oil and alternately thread the prawns, mango chunks and red pepper on each one - make sure you divide the ingredients equally.

  5. Cook under a hot grill for 6-8 minutes, turning frequently, until the prawns are cooked and browned.

  6. Serve with lemon wedges and a handful of fresh mint.
